About your search for yeoman responsibilities the best suggestion that I can offer is to seek out a old NAVPERS YEOMAN instruction books.
You may be able to find some listed for sale on EBAY.
I don't remember anything like what you were asking about in yeoman school and I really think the NAVPERS books would be your best bet.
